Provençal oven-baked vegetables

Ingredients for 1 servings:

  • 300 g potatoes
  • 1 tbsp oil (olive oil)
  • 1 red bell pepper(s)
  • 1 medium zucchini
  • 1 clove(s) garlic
  • Salt
  • pepper
  • Herbs of Provence

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat oven to 200°C. Wash the potatoes thoroughly and halve or quarter them lengthwise, depending on their size. Toss with olive oil and salt and place in a baking dish. Cook in the center of the oven for about 30 minutes, turning occasionally. In the meantime, wash and trim the vegetables and cut into bite-sized pieces. Peel the garlic and slice very thinly. Add everything to the potatoes and season with salt and pepper. Cook for another 25 minutes, turning occasionally, and stir in the Provençal herbs during the final turning.
