Ingredients for 6 servings:
- 2 kg potatoes, peeled and diced
- ½ tsp sweet paprika powder
- 2 tsp ground cumin
- 1 ½ tbsp lemon juice
- 3 tbsp olive oil
- Pepper, freshly ground
- Salt
- 1 tbsp mint, finely chopped fresh
- Mint (fresh sprigs) for decoration

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Side dish to pan-fried dishes or vegetarian with a salad
This recipe serves 6-8 people. Boil the potatoes until just tender, drain, and place them in a serving bowl. Whisk the remaining ingredients in a small bowl until smooth, then pour over the potatoes, mix briefly, and serve immediately, garnished with fresh mint sprigs.
