Potatoes with lentils and herb curd

Ingredients for 3 servings:

  • 6 large potatoes
  • 250 g lentils, red
  • 1 cup of quark, crème fraîche or similar.
  • some salt
  • 1 bunch of herbs, optionally frozen herbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Simple and vegetarian

Boil the potatoes and halve them to serve. Cook the lentils according to the package instructions; I usually prepare them in the microwave. Lightly season the lentils to taste. To serve, add the lentils to the potatoes and mix the quark with the herbs. Then, if desired, spoon the herb quark over the lentils. The dish can be served warm or cold. If you’d like a side dish, salmon or meat works well—I like to serve it with crispy fried bacon cubes.
