Potatoes with peppers and tomatoes

Ingredients for 1 servings:

  • 4 potatoes
  • 1 bell pepper(s), green
  • 2 tomatoes
  • 2 sprigs of thyme
  • 2 sprigs rosemary
  • 2 tbsp olive oil
  • salt and pepper
  • 1 tbsp mixed seeds (pine nuts, pumpkin seeds, sesame)

Working time approx. 15 minutes; Total time approx. 15 minutes

Recipe for the Tupperware Ultra 2 l

Wash the potatoes and dry them. Wash, trim, and roughly dice the peppers and tomatoes. Wash the fresh thyme and rosemary and pat them dry. Place the potatoes in a lidded dish (e.g., Tupperware Ultra). Place the diced peppers and tomatoes on top. Then add the seeds and rosemary and thyme sprigs. Drizzle 1-2 tablespoons of olive oil over the vegetables and mix everything together. Cover and bake in a preheated oven at 230°C for about 45 minutes. Serve with a dip, or simply as a side dish with meat.
