Ingredients for 2 servings:
- 1 large onion(s)
- 370 g carrot(s)
- 370 g potatoes
- 2 tbsp olive oil for frying
- ½ tsp sweet paprika powder
- Sea salt
- 0.33 tsp white pepper from Sri Lanka, ground
- 1 tsp oregano
- 500 ml vegetable stock
- 200 g sour cream substitute
- 1 tsp sambal oelek
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Peel, halve, and dice the onion. Peel and dice the carrots and potatoes. Heat the oil in a pan and fry the onions briefly. Add the carrots and potatoes. Stir in the paprika and fry. Add the vegetable stock, oregano, and pepper and mix well. Cover and cook for about 20 minutes until cooked through. Pour the sour cream into a bowl. Add salt and sambal oelek, mix well.
