Ingredients for 4 servings:

  • 750 g potatoes, medium-sized, new harvest
  • 80 g butter
  • salt and pepper
  • 100 g cheese, medium-hard cheese (Appenzeller, Gouda)
  • 1 bunch of chives

Preheat oven to 220 degrees Celsius. Wash the potatoes and place them individually on aluminum foil. Sprinkle half of the butter on top in small flakes. Season each potato with salt and pepper and wrap tightly in aluminum foil. Bake on a baking tray in the oven for about 50 minutes. In the meantime, finely grate the cheese. Cut the chives into rolls. Remove the potatoes from the oven, unwrap them, cut a hole in the middle, and press them apart slightly. Place them back on the baking tray, sprinkle with cheese, and bake for about 10 minutes. Sprinkle with chives.
