Poultry: Chicken Strips in Apple and Onion Sauce

Ingredients
 

  • 3 Chicken breasts
  • 1 tbsp Soy sauce dark and sweet
  • 2 tbsp Asian fish sauce
  • 1 tsp Curry powder
  • 1 tsp Black pepper from the mill
  • 1 tsp Lemongrass, dried and ground
  • 4 tbsp Extra virgin olive oil
  • 1 Fresh onion
  • 1 Apple, sour
  • 4 tbsp Olive oil for frying
  • 100 ml Cream
  • 1 tsp Grained vegetable broth *

Instructions
 

  • Remove tendons and fat from the meat and cut into bite-sized pieces. Add the soy sauce, fish sauce, curry powder, pepper and oil and marinate the meat in the fridge for about 4 hours.
  • Heat the oil in a pan and fry the meat in portions. Be careful, there is a risk of burns because of the sweet soy sauce.
  • Peel the onion and apple, cut both into wedges. Brown half of the apple wedges and the onion cubes in the meat fat. Pour some water and add the vegetable stock.
  • Transfer the mixture to a saucepan and puree it finely.
  • Put the meat back in the pan and pour in the sauce. Mix with cream and season with curry powder, salt and pepper. Let simmer for about 10 minutes.
  • Finally, add the second half of the apple wedges for about 3 minutes and let them cook a little.
  • Arrange with rice on a preheated plate and garnish with something "green".
