Poultry: Chicken Strips with Honey-mustard Sauce

Ingredients
 

  • 1 piece Fresh chicken breast, approx. 250 g
  • 1 piece Fresh onion
  • Black pepper from the mill
  • 1 tablespoon Goose lard without greaves
  • 1 tablespoon Flour
  • 1 tablespoon Honey liquid
  • 1 tablespoon Mustard medium hot
  • 100 ml Cream 10% fat
  • Salt

Instructions
 

  • Remove tendons and fat from the meat and cut into narrow strips. Peel the onion and chop finely.
  • Heat the goose lard in a pan and fry the chicken strips until golden brown on both sides. Add onion cubes and roast with them. Season the whole thing with pepper and dust some flour.
  • Pour some water and let the meat simmer gently for about 5 minutes.
  • In the meantime, mix honey with mustard and cream and add to the meat. Bring to the boil and season with salt if necessary.
  • There was also spinach gnocchi fried in clarified butter.
