Chicory: Prepare a variety of vegetables
No matter how you prepare chicory, you should definitely remove the stalk. Due to its many bitter substances, this part of the vegetable is hardly edible.
- To do this, first cut off the stalk with a knife. Then halve the chicory and cut out the inner parts of the stalk in a wedge shape.
- The classic is chicory salad. To do this, use the vegetables raw and simply cut the leaves into fine strips.

- Chicory becomes very tender and mild if you cover it with a strong cheese and gratinate it in the oven.
- However, do not cut the vegetables into small pieces, as they would lose a lot of water when gratinated.
