Pretzel Burger
The perfect pretzel burger recipe with a picture and simple step-by-step instructions.

- 1 disc Ginger
- 1 piece Lemon peel
- 1 piece Orange peel
pretzel dumplings
- 4 piece Pretzels old
- 150 ml Milk lukewarm
- 0,5 piece Onion
- 2 piece Eggs
- 1 tbsp Oil
- 1 tbsp Chopped parsley
- 1 Knife point Nutmeg
- 1 pinch Pepper
Beef fillets
- 5 piece Beef fillet
- 1 tbsp Clarified butter
- 1 pinch Salt and pepper

- 300 g King oyster mushrooms
- 1 tsp Oil
- 20 g Sesame seeds
- For the sauce, brown the bones on a baking sheet at 220 ° C for about 45 minutes. Peel the onion, carrots and celery and cut into 1 1/2 cm cubes.
- Caramelize the powdered sugar in a large saucepan over medium heat. Stir in tomato paste and sauté briefly. Gradually deglaze with the red wine and simmer.
- Sauté the diced vegetables in oil in a pan. Put the bones in the saucepan and top up with the chicken stock. Let the vegetables and bones steep for 2 hours over a low heat. Let the bay leaf, rosemary sprig, peppercorns and spices soak in the sauce for a few minutes. Drain through a sieve.
- For the pretzel dumplings, cut the pretzels into approx. 1 cm pieces, pour the lukewarm milk over them and let them steep. Peel the onion and cut into small cubes, heat the oil in a pan and steam the onion until translucent.
- Mix the onion, eggs and parsley into the dumpling mixture. If the mixture is too moist, add some breadcrumbs. Season with pepper and nutmeg.
- Spread out a sheet of aluminum foil and cover with cling film. Place the dumpling mixture on top and shape it into an approx. 10 cm thick roll. Cook the roll in a large saucepan in gently simmering water for about 35 minutes and later cut it into slices.
- Sear the fillet of beef in clarified butter on both sides and lightly salt and pepper to taste. Place in the oven for about 5 minutes to rest at 65 ° C.
- Clean the king oyster mushrooms and cut into approx. 1.5 cm pieces, fry briefly in oil.
- To serve, place a fillet between 2 slices of pretzel dumplings and top with the mushrooms. Pour the sauce over and sprinkle with sesame seeds.
