Pretzel dumplings

Ingredients for 4 servings:

  • 4 pretzels from the previous day, cut into small pieces
  • 1 m.-sized egg(s)
  • 1 m.-sized onion(s)
  • ¼ liter milk, room temperature
  • some salt and pepper
  • herbal salt
  • 1 handful of parsley, fresh

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

In a bowl, soak the pretzels in the milk. Peel and finely dice the onion. Sauté the diced onion in a pan until lightly translucent and let cool. Add the egg to the pretzels and season with salt, pepper, herb salt, and parsley. Add the onions and mix the mixture well with your hands. Heat enough water in a large cooking pot with a steamer insert. With wet hands, form the pretzel mixture into dumplings. Place the dumplings in the cold steamer insert, hang them in the pot, and put the lid on. As soon as the water starts to boil, reduce the heat but leave the lid on. Steam the dumplings for about 25 minutes.
