Pretzel Sticks

The perfect pretzel sticks recipe with a picture and simple step-by-step instructions.

dough

  • 500 g Wheat flour
  • 22 g Yeast fresh
  • 250 ml Water, lukewarm
  • 50 g Liquid butter
  • 10 g Salt
  • 5 g Sugar

Soda lye

  • 500 ml Water
  • 25 g Food atron

To supervise (optional)

  • Coarse salt
  • Grains (chia, flaxseed, poppy seeds, sesame …)
  • Grated cheese
  1. Put the water in a bowl and dissolve the yeast in it.
  2. Add the flour, butter, sugar and salt to the bowl and knead everything into an even dough and cover and let rise in a warm place for 30 minutes.
  3. For the caustic soda, boil water in a saucepan (the saucepan should be large and deep enough that the finished pieces of dough can later bathe in it), add soda (foams up briefly) and cook for 5 minutes.
  4. Knead the dough again and divide it into portions (I always make 80g pieces, that makes 10 pieces) and bring it into the desired shape (e.g. stick, roll, croissant, pretzel, knot, plait …).
  5. The caustic soda should now only be at the boiling point but no longer boil! Place the dough pieces in the sodium hydroxide solution for 1 minute each, turning.
  6. Place the drained dough pieces on a baking sheet lined with baking paper (keep in mind that they will still rise a little, I always get the 10 pieces on a baking sheet) and sprinkle with salt, grains or cheese.
  7. Now cover the finished pretzel parts and let rise for another 30 minutes. Preheat the oven to 200 °.
  8. Now bake the pretzel pieces brown at 200 degrees upper and lower heat for 20 minutes.
