Protein banana bread with oatmeal

Ingredients for 1 servings:

  • 1 tbsp chia seeds
  • 4 tbsp water
  • 100 g oat flakes
  • 70 g protein powder, neutral
  • 50 g protein powder (chocolate flavor)
  • 1 packet of baking powder
  • ½ tsp cinnamon powder
  • ½ tsp nutmeg, freshly grated
  • 1 pinch of salt
  • 4 tbsp coconut oil or sunflower oil
  • 175 ml orange juice, alternatively oat drink
  • 3 m.-sized banana(s)
  • e.g. blueberries, chocolate drops or banana slices as topping
  • possibly grease for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Preheat the oven to 160°C fan-assisted oven or 180°C conventional oven. Mix the chia seeds and water in a glass and let stand for about 5 minutes until the chia seeds have expanded slightly. Briefly place all ingredients in a food processor or mix in a large bowl with a hand mixer until smooth. Pour the dough into a greased or parchment-lined loaf pan and sprinkle with toppings such as blueberries, chocolate drops, banana slices, etc., as desired. Bake the banana bread in the preheated oven on the middle rack for about 1 hour. The bread is ready when a wooden skewer or knife inserted comes out clean. Remove from the oven and let cool. Store in the refrigerator.
