Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 250 g spelt bran or spelt semolina
  • 50 g flaxseed, whole
  • 50 g ground almonds
  • 50 g sunflower seeds
  • 4 eggs
  • 1 packet of baking powder
  • 1 small carrot(s)
  • 1 tsp, heaped herbs, fresh or frozen
  • e.g. salt and pepper
  • chili powder
  • nutmeg
  • Caraway powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

low carb, healthy, easy preparation

Mix the low-fat quark, eggs, and baking powder with a hand mixer, then let it rest briefly. In the meantime, wash, peel, and grate the carrot. Stir in the spelt bran, flaxseed, almonds, and sunflower seeds. Add the grated carrot, herbs, and spices and stir to combine. Pour the batter into a loaf pan lined with baking paper. Bake in the oven at 180°C (fan oven) or 200°C (top/bottom heat) for approximately 50-60 minutes. Let cool and enjoy.
