Ingredients for 1 servings:

  • 2 eggs
  • 1 egg white
  • 100 g low-fat curd cheese
  • 100 g cottage cheese
  • 1 tbsp natural yogurt
  • Sweetener as needed
  • 30 g protein powder (whey protein vanilla)
  • 30 g spelt flour
  • ½ tsp baking powder
  • 50 g blueberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Low-calorie low-carb muffins with protein powder

Mix the eggs, cottage cheese, low-fat quark, yogurt, and sweetener. Then add the protein powder, baking powder, and flour and mix everything together. Finally, stir in the blueberries. Pour the batter into muffin cups and bake at 180°C in the lower part of the oven for 20-30 minutes. Makes 6-9 muffins. Add sweetener according to your preference. This should be approximately equivalent to 2 tablespoons of sugar.
