Protein toasties with avocado, scrambled eggs, ham and cheese

Ingredients for 1 servings:

  • 4 toastie(s) (egg white toasties)
  • 4 tbsp guacamole
  • 4 tbsp cheese, grated
  • 1 slice(s) cooked ham, quartered
  • 2 eggs
  • 1 shot of plant drink
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Perfect for breakfast or dinner

Whisk the two eggs with a dash of plant-based milk and fry in a small pan, stirring, until the mixture thickens. Meanwhile, toast the toasties and spread with guacamole. Then top with the scrambled eggs, followed by the ham and cheese. Microwave or oven grill for 10 minutes until the cheese is melted. Serve warm.
