Provençal-style mushrooms

Ingredients for 6 servings:

  • 1 kg mushrooms, small
  • 125 ml oil (olive oil)
  • 4 cloves garlic
  • 2 bay leaves
  • Salt
  • pepper
  • Thyme

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Heat olive oil and sauté the garlic slices, but do not brown them. Add the cleaned mushrooms (use only small ones, do not cut them) along with the bay leaves, season, and simmer in a covered pan for about 10 minutes. Season to taste, let cool, and serve well chilled as an appetizer with baguette. Keeps in the refrigerator for up to 2 days. If you have any leftovers, chop them up and use them to season a tomato sauce or gravy.
