Ingredients for 8 servings:

  • 200 g Skyr
  • 4 eggs
  • 1 tsp salt
  • 90 g flour
  • 1 tsp baking powder
  • 100 ml water, lukewarm
  • 40 g psyllium husks
  • 2 tbsp kernels, mixed

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Preheat oven to 170°C fan/convection oven. Combine skyr, eggs, and salt. Sift in flour and baking powder while stirring. Add psyllium husks and warm water and mix immediately. Let stand for 10 minutes. Divide the firm dough into 8 equal parts, shape into balls with wet hands, and place on a baking sheet. Sprinkle with the seed mix. Bake for 50-60 minutes, let cool in the oven, leaving the oven uncovered. 125 kcal per serving.
