Puff pastry – marzipan – crumble

Ingredients for 1 servings:

  • 4 slices of puff pastry, each 12 cm x 25 cm
  • 75 g marzipan paste
  • 125 g cream cheese
  • 1 egg yolk
  • 300 g strawberries or other seasonal fruit of your choice
  • 75 g sugar
  • 100 g flour
  • Salt
  • 75 g butter, cold
  • 1 tbsp cornstarch
  • Flour for the work surface

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Thaw the puff pastry sheets side by side on a floured work surface. Meanwhile, crumble the marzipan and mix with the quark, egg yolk, and cornstarch. Rub the sugar, flour, and a pinch of salt together in a bowl until crumbles form. Gather the puff pastry together and roll out to about 1 cm thick. Place in a round springform pan (26 cm diameter), press down firmly, and trim off any excess dough around the edges. Spread the quark on top. Hull the strawberries, halve them if necessary, and place them on top of the quark. Sprinkle everything with the crumble mixture. Bake in a preheated oven at 210°C for about 20 minutes.
