Puff pastry – minced Copenhagener

Ingredients for 8 servings:

  • 8 slices of frozen puff pastry (10 x 10 cm)
  • 3 spring onions
  • 1 garlic clove(s)
  • 1 tbsp oil
  • 1 tbsp tomato paste
  • 150 g cherry tomatoes
  • 500 g minced meat
  • 200 g tomatoes, pureed
  • oregano
  • salt and pepper
  • 80 g cheese, grated (Emmental)
  • 1 egg yolk and
  • 2 tbsp milk
  • oregano
  • salt and pepper
  • 2 tbsp milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Spread the puff pastry on a table and let it thaw. In the meantime, chop the garlic clove and slice the spring onions into rings. Halve the cherry tomatoes. Heat the oil in a pan and fry the minced meat. Season, add the garlic and spring onions, and fry. Briefly fry the tomato paste, then add the passata and bring the sauce to a boil. Add the cherry tomatoes, simmer briefly, and season with oregano, salt, and pepper. Place the pastry discs on a baking sheet and place the minced meat mixture in the center of each. Sprinkle with grated cheese. Gently fold the pastry corners over the filling and brush the dough with the egg yolk and milk mixture. Bake in a preheated oven at 200°C for 20-25 minutes.
