Puff pastry roll with zucchini and minced meat

Ingredients for 3 servings:

  • 1 puff pastry, fresh, from the refrigerated section
  • 250 g minced meat
  • 3 m.-large zucchini
  • 100 g cheese
  • 1 tsp vegetable stock powder
  • salt and pepper
  • 1 egg(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Wash and coarsely grate the zucchini. Lightly brown the minced meat and fry the zucchini for another five minutes. Mix in 1 teaspoon of vegetable stock powder. Season with salt and pepper. Roll out the puff pastry. Spread the minced meat and zucchini filling and the cheese evenly over the puff pastry. Roll up the roll and press the ends together. Brush with the beaten egg. Bake in a preheated oven at 180°C for about 30 minutes until golden brown. Slice before serving.
