Ingredients for 8 servings:
- 2 jar mandarin orange(s), without sugar, with sweeteners
- 100 g sugar substitute, e.g. Xucker light
- 1 bag of biscuits (Leibniz Fruits sugar-free biscuits with fruit sweetness)
- 500 g low-fat curd cheese
- 1 cup whipped cream, vegan
- 1 tsp vanilla extract or vanilla pulp

Beat the chilled whipped cream with the sugar substitute and vanilla extract until the crystals have dissolved and the air is incorporated. Add the quark and mix briefly with a mixer. Drain the mandarins and carefully fold in. Transfer the dessert to a glass dish. Crumble half of the biscuits into fine crumbs and sprinkle over the top. Cover and refrigerate overnight. It’s also delicious with cinnamon.
