folded herb bread – delicious when grilling
Mix the yeast with the sugar and dissolve in the warm water. Once the yeast has dissolved, add this liquid to the flour, egg, and oil, and mix everything together to form a smooth dough. Add the salt halfway through. When the dough is nice and smooth, it shouldn’t be sticky. Add a little more flour if necessary. Place it in a bowl and let it rise in a warm place for about an hour. For the filling, fry the bacon in a pan, if desired. Then add it to the softened butter along with the herbs (anything you like and have) and the chopped garlic and mix well. It should be easy to spread later. Roll out the risen yeast dough into a large rectangle. It should be about 50 x 50 cm. Not too thin and not too thick (about 4-8 mm). Spread the softened herb butter evenly over the surface. If desired, sprinkle coarse salt over the spread (depending on the taste of the herb mixture). It shouldn’t taste too salty. Then cut the dough into 6 strips of roughly equal width. Always place 2 strips coated with the herb mixture on top of each other – the herb mixture is between the dough and not the other way around. This then results in 3 folded strips. Then divide each of these strips into 6 equal-sized squares. Fill these squares vertically into a loaf pan. To do this, simply stand the loaf pan almost upright on its narrow end and stack the squares on top of each other until the dough is completely filled. Stand the pan back upright so that the vertical squares can spread out evenly. Let the dough rise again for about 30 minutes. Place the pan in the preheated oven at 175°C (top/bottom heat) and bake for about 40 minutes. Then remove from the oven and let cool. Best placed on a wooden board on the table during grilling and serving. Everyone can now simply tear off a piece of herb bread and enjoy it with the grilled food.
