Ingredients for 1 servings:

  • 1 kg pumpkin flesh
  • 350 g sugar
  • 3 tbsp tomato paste
  • 3 cloves garlic, more depending on the size of the cloves
  • 5 chili peppers, or more depending on the degree of spiciness
  • 1 tsp cumin
  • 3 tbsp olive oil
  • Black pepper, freshly ground
  • Salt
  • 250 ml orange juice

Chop the pumpkin flesh into small pieces, season with salt, and cook until soft. Make a paste from tomato paste, garlic, chili peppers, cumin, and olive oil. Finely puree the cooked pumpkin, season with the paste, salt, and pepper, add the orange juice and sugar, and bring to a boil. Simmer gently for about 30 minutes. Pour into clean jars and screw on tightly. Once cooled, store in a cool place. Shelf life: about 4 weeks. Tastes wonderful with stir-fries.
