Ingredients for 2 servings:

  • 600 g pumpkin flesh (butternut or nutmeg)
  • some lime juice
  • some honey, liquid
  • some salt and pepper
  • 1 handful of nuts, roughly chopped (e.g. walnuts or pine nuts, possibly mixed nuts)
  • n.e. blue cheese (e.g. Gorgonzola)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the pumpkin into pieces, remove the seeds and innards. Season the pieces with a little salt (flaky sea salt works best) and pepper. Bake in an ovenproof dish at 180°C (top/bottom heat) for about 30 minutes until al dente. Let cool until lukewarm. Once cooled, remove the skin. Drizzle lime juice and honey over the pumpkin pieces, add the crumbled cheese, and sprinkle with the chopped nuts. A great dessert for adults during pumpkin season. Children are often a bit skeptical about the sweet and salty combination and the slightly spicy blue cheese. Diabetics can also omit the honey; then the dessert is practically free of gluten if the pumpkin is not overcooked.
