Pumpkin – Pickert

Ingredients for 4 servings:

  • 1 cube of yeast, fresh
  • ½ liter milk, lukewarm
  • 1 tsp, heaped sugar
  • 500 g pumpkin flesh, fresh, coarsely sliced
  • 500 g flour
  • 2 eggs
  • 1 tsp salt
  • Oil, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the yeast with 5 tablespoons of the milk and the sugar and let it rise for 15 minutes. Coarsely grate the peeled and seeded pumpkin and mix it alternately with the flour, eggs, salt, and milk until a thick batter forms. Add the yeast mixture and season with salt. Fry in batches in a pan with oil, like potato pancakes.
