Ingredients for 1 servings:
- 1 pumpkin(s) , (butternut squash)
- 1 onion(s)
- vegetable broth
- 75 ml coconut milk, from the can – concentrate
- 10 g pumpkin seeds
- chili powder
- curry
- Salt
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Pumpkin sauce for 1 large eater, or 2 smaller ones – suitable for WW (4.5 P.)
Dice the pumpkin and onion and simmer in a little water, vegetable stock, and curry (covered) until the pumpkin is soft. Add the coconut milk, pumpkin seeds, and spices and let it simmer slightly. The coconut milk counts as 3 points and the pumpkin seeds as 1 point. However, you can add one point of fat for the pumpkin seeds!
