Ingredients for 4 servings:

  • 1 kg pumpkin(s), diced
  • 2 tbsp butter
  • 2 tbsp curry
  • ¾ liter water or vegetable broth
  • 3 oranges (juice)
  • 200 g sour cream
  • 1 tsp salt
  • 1 tsp pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Roast the curry in hot butter. Add the pumpkin cubes. Deglaze with vegetable stock. Cover and simmer for 30 minutes. Blend everything with a hand blender. Add the orange juice and sour cream. Caution: Do not let it boil any further! You can also add cooked rice to the soup. It tastes delicious too!
