Ingredients for 4 servings:

  • 1 onion(s), quartered
  • 2 tbsp oil
  • 650 g pumpkin flesh (Hokkaido), diced
  • 200 g carrot(s), in pieces
  • 200 g potatoes, in pieces
  • 500 g water
  • 3 tbsp vegetable broth, granulated
  • 75 g sour cream
  • 2 tsp curry powder
  • pepper
  • chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the onion in the mixing bowl and chop for 5 seconds/speed 4. Add the oil and sauté for 1.5 minutes/100°C/speed 2. Place the pumpkin, carrots, and potatoes in the mixing bowl and chop for 15 seconds/speed 5. Add the water and vegetable stock and cook for 15 minutes/100°C/speed 3. Add the sour cream and spices to the mixing bowl and mix for 20 seconds/speed 5. Serve with a dollop of sour cream, if desired. Serve with a nice slice of bread or sausage. One serving (the soup alone) has 180 kcal, 4 g protein, 9 g fat, and 20 g carbohydrates.
