Ingredients for 2 servings:
- 300 g pumpkin flesh, cooked
- 1 m.-sized onion(s), sliced
- 2 tbsp butter or ghee
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- n. B. pumpkin seeds for decoration
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Meatless
Peel and slice the onion, wash, deseed, and finely chop the bell peppers. Sauté the chopped onion in butter or ghee. Add the finely diced bell peppers and simmer for a few minutes. Then add the cooked pumpkin flesh and puree everything, seasoning if desired; the pumpkin was already seasoned during cooking. This goes well with pasta, such as spirelli. I had quite a bit of pumpkin soup left over, which freezes well.
