Ingredients for 1 servings:

  • 170 g brown sugar
  • 1 egg(s)
  • ½ tsp vanilla extract or 1 packet of bourbon vanilla sugar
  • 225 g peanut butter
  • some salt, coarse

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 51 minutes

In a bowl, whisk the egg and sugar together. Add the vanilla extract and peanut butter and stir until smooth. Line a baking sheet with parchment paper and place 2 teaspoons of the cookies 4-5 cm apart on the sheet. Sprinkle with salt. Place the baking sheet in the freezer for 15 minutes. Meanwhile, preheat the oven to 180 degrees Celsius. After the resting time, bake the cookies for about 16 minutes. They’re done when they begin to brown slightly. These cookies are crispy on the outside and soft and chewy on the inside.
