Pumpkins are often very large and usually have little taste of their own, which is why they are often pickled. In this way, you make them last longer and give them an individual taste. We reveal three delicious recipes for pickling pumpkins in this article.
Pickle pumpkin sweet and sour
Probably the most popular variant for pickling pumpkins is the sweet and sour one. For this, you need your pumpkin (about 1 kilogram), 500 grams of sugar, 4 cloves, 250 milliliters of white wine vinegar, 1/2 teaspoon of cinnamon, and the zest of a lemon.
- First, remove the skin from the pumpkin and cut the flesh into cubes.
- Now put the white wine vinegar together with the spices and the lemon zest in a saucepan and bring the mixture to a boil.
- Afterward, remove the vinegar mixture from the heat and add the squash. Now let it steep for about a day.
- The next day, drain the vinegar and boil it again, this time adding the sugar.
- Now add the pumpkin pieces again and wait until they become translucent.
- Then, while the squash is still hot, place it in mason jars and add the vinegar mixture until the jar is full.
Spicy pickled pumpkin
An alternative to the sweet and sour pumpkin is the spicy pumpkin. In addition to your pumpkin (about 750 grams), for this recipe, you will need 250 grams of brown sugar, 180 milliliters of white wine vinegar, 500 milliliters of water, 2 cloves of garlic, 6 fresh chili peppers, and also some salt and pepper.
- First, peel your pumpkin and cut the flesh into cubes.
- Place the cubes in a bowl and sprinkle with the sugar. Now leave this for about 3 hours.
- Meanwhile, slice your garlic and wash the chilies.
- Then put the water and white wine vinegar in a saucepan. Also add the garlic, chilies, and some pepper and let the mixture come to a boil.
- Once the mixture is boiling, you can add the squash and simmer for about 7-8 minutes.
- Then remove the squash along with the chili peppers and garlic and place in jars.
- Then fill up the jars with the liquid and close them tightly.
Sweet and spicy vanilla squash
For this recipe, you will need 1 pumpkin (about 4 kilograms), 1 lemon, 1 vanilla pod, 20 grams of fresh ginger, 5 chili peppers, 1.5 kilograms of sugar, 1 tablespoon of cloves, 2 cinnamon sticks, and 1/2 liter of white wine vinegar.
- First, peel your pumpkin and cut it into small cubes.
- Now put them in a bowl and pour 125 milliliters of water and vinegar over them. Then let the squash sit overnight.
- Now remove the pulp from the vanilla pod and squeeze out the lemon. Also, peel the ginger and wash the chili pepper.
- Then put the remaining vinegar in a saucepan with 375 milliliters of water, sugar, lemon juice, ginger, vanilla pulp, cinnamon sticks, and cloves, and let the mixture boil.
- Meanwhile, drain your squash. As soon as the mixture boils, you can slowly add the diced pumpkin and let it boil briefly.
- Once the pieces are translucent, you can remove the squash and place it in the jars. Pour the vinegar mixture over the top and seal the jars tightly.
