Ingredients for 1 servings:
- 2 cup(s) rice flour (whole grain)
- 2 cup(s) coconut milk, 60% without additives
- ½ cup sugar
- 3 tsp, leveled baking powder
- ½ tsp salt
- ½ cup desiccated coconut
- 1 cup desiccated coconut, for rolling

Mix rice flour, sugar, salt, baking powder, and desiccated coconut with coconut milk until a smooth, lump-free batter forms. Pour into a silicone muffin tin, filling halfway, and steam for 35-45 minutes in a wok with a steamer insert or in an electric steamer. The muffins are done when a toothpick inserted into the pan comes out clean. Let cool, remove from the tin, and roll in desiccated coconut.
