Quail bean stew with smoked pork and mettenden

Ingredients for 8 servings:

  • 500 g beans (quail beans), dried
  • 1 ½ liters of water
  • 500 g soup vegetables, frozen
  • 5 m.-sized potatoes
  • 500 g smoked pork (neck)
  • 5 Mettenden
  • e.g. salt and pepper
  • n. B. Broth, granulated
  • n. B. Maggi

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour; Total time approx. 9 hours 15 minutes

hearty, tasty, affordable

Soak the chickpeas in water overnight. The next day, place the beans and the soaking water in a large pot. Add the soup vegetables and the peeled and diced potatoes to the pot along with the smoked pork and the mettenden sausages. Bring to a boil, then simmer over low heat for 1 hour. Remove the meat, cut it into bite-sized pieces, and return it to the pot. Important: Do not add salt or seasoning until the stew is cooked, otherwise the beans will not be tender! Once everything is cooked, season generously with salt, pepper, granulated stock, and Maggi. Cooking in a pressure cooker only takes 30 minutes.
