Grandma Luci's bean soup

Ingredients for 4 servings:

  • 500 g white beans
  • 500 g potatoes
  • 2 carrots
  • ¼ celeriac
  • 1 stalk(s) leek
  • 4 Mettwurst sausages
  • 2 tsp vegetable stock powder
  • 1 slice(s) smoked Kasseler
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

in a pressure cooker

Soak the beans overnight. The next day, add the beans and water to the pressure cooker and bring to a boil. After about 5-10 minutes, skim off any foam that forms. Add the peeled and diced potatoes and the finely chopped vegetables. Add the Mettwurst and the smoked pork (you can add it whole or diced, depending on your preference). Finally, sprinkle in a little salt and the vegetable stock powder. Cook in the pressure cooker according to the instructions for about 30 minutes. The whole family has enjoyed it for four generations. And it’s even better the second day.
