Ingredients for 2 servings:

  • 500 g beans (Rhineland green beans, lactic acid fermented)
  • 1 jar potato(s), 420 g drained weight
  • 1 pork knuckle from the grill, fully cooked
  • 1 m.-sized onion(s)
  • 60 g bacon cubes
  • 1 tsp savory

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Sour beans with potatoes and pork knuckle, quick version

Peel the onion and dice it into small pieces. Heat a pan and fry the bacon cubes. Then add the diced onion and fry. Rinse the potatoes, drain them, and dice them. Press the potatoes through a potato ricer into a pot. Add the beans and season with savory. Mix the beans and potatoes well, add the knuckle of pork, and simmer for 15-20 minutes. Remove the knuckle and remove the bone. Return the meat to the pot. Plate up and serve.
