Quark and berry casserole

Ingredients for 2 servings:

  • 500 g low-fat curd cheese
  • 2 eggs
  • 1 packet of vanilla pudding powder
  • 250 ml plant-based drink
  • 1 pinch(s) cinnamon powder
  • 15 g almonds, chopped
  • 300 g berries, frozen
  • 10 g honey, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Preheat the oven to 160°C fan/convection oven. Using a hand mixer, combine the quark, eggs, plant-based milk, and pudding mix (or honey if desired) until smooth. Fold in a pinch of cinnamon and the chopped almonds. Pour the quark mixture into a baking dish and scatter the berries on top. Place the dish on the middle rack of the oven for about 60 minutes. When the casserole is lightly browned, it’s ready. Let it cool slightly and serve. Per serving: approximately 457 kcal.
