Quark and leek casserole

Ingredients for 3 servings:

  • 1 kg leek
  • 250 g quark (low-fat quark)
  • 1 bunch of parsley
  • 3 cloves garlic
  • 1 tbsp lemon juice
  • salt and pepper
  • nutmeg
  • 2 tomatoes
  • 150 g cheese for topping (according to taste)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and wash the leek, and slice into rings. Wash and finely chop the parsley. Crush the garlic. Dice the tomatoes. Mix the leek with the tomatoes, parsley, and garlic, and season with salt, pepper, and nutmeg. Mix the quark with the lemon juice and 50 grams of the grated cheese and stir into the leek mixture. Sprinkle the remaining grated cheese on top. Bake in the oven at 200°C for about 40 minutes. This dish goes perfectly with boiled potatoes.
