Ingredients for 1 servings:
- 400 g quark (cottage cheese) or 500 g buttermilk, but no yogurt
- 100 ml yogurt
- 2 eggs
- 140 g spelt flour, smooth
- 80 g wholemeal spelt flour
- 60 g almonds, ground
- 30 g flaxseed meal
- 40 g psyllium husks
- 30 g sunflower seeds, almonds or walnuts, chopped
- Salt
- 1 tsp cream of tartar baking powder (pure cream of tartar powder)
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes
Preheat the oven to 220°C (top/bottom heat). Stir together the curd cheese, yogurt, and eggs. Combine the dry ingredients and then knead well with the curd cheese and egg mixture. Let the dough rest in a warm place for about 10 minutes. Then shape the dough into a loaf, dust with flour, and cut it 2-3 times. Let the loaf bake for about 10 minutes. Then reduce the temperature to 200°C and bake the bread for about 45-50 minutes. For variety, you can also refine the bread with various spices.
