Quark-coconut rolls

Ingredients for 1 servings:

  • 300 g wholemeal flour
  • 250 g low-fat curd cheese
  • ½ pack of baking powder
  • 2 eggs
  • 2 tbsp flaxseed
  • 6 tbsp coconut milk
  • 1 dashes lime juice or lemon juice
  • 1 pinch of salt
  • ½ tsp brown sugar
  • e.g. oat flakes, sunflower seeds, pumpkin seeds or similar

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

for 6 rolls

Mix all ingredients, except for the toppings (oats, seeds, etc.), into a dough, then form 6 rolls. Tips: Depending on the amount of coconut milk, the dough can be a bit sticky. It’s best to sprinkle the baking paper and your hands with a little extra flour to prevent it from sticking. Rolling the rolls in flour can also help achieve a nice shape. Then, using a sharp, thin knife, make an X-shaped cut in the top of the rolls to allow the hot air to penetrate more easily. Finally, sprinkle the rolls with your choice of toppings: oats, sunflower seeds, or pumpkin seeds are all delicious. You can also mix and match! Bake the whole thing at around 180-200°C (top/bottom heat) for between 20 and 25 minutes (depending on your oven and the desired browning).
