Ingredients for 1 servings:
- 100 g quark (low-fat or semi-skimmed quark)
- 1 egg yolk
- 2 tsp mustard (e.g. Dijon)
- salt and pepper
- 1 tsp vinegar (white wine or herb vinegar)
- 1 small pepper, red
- 3 tbsp vegetable broth
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
For the mayonnaise, combine all ingredients except the vinegar. Cut the peppers into very small pieces. Sauté with the broth for about 10 minutes until soft. Let cool and mix with the quark. Goes well with jacket potatoes, grilled meat, cold roasts, vegetables, etc.
