Ingredients for 4 servings:
- 4 egg yolks
- 500 g low-fat curd cheese
- 100 g sugar
- 1 packet of vanilla sugar
- 150 g flour
- 100 ml milk
- 1 pinch of salt
- 100 g hazelnuts, chopped
- 4 egg whites, beaten stiffly
- Butter or margarine for frying
- Powdered sugar or cinnamon sugar for sprinkling
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Beat the egg yolks with sugar and salt until frothy. Stir the quark, flour, milk, and hazelnuts into the batter one at a time. Finally, fold in the beaten egg whites. The batter will then be nice and light and airy, and the finished Schmarren will be beautifully moist. Heat the fat in a (preferably non-stick) pan and spread 1/3 of the batter at a time in the pan (the batter should be at least 2 cm thick in the pan) and brown on both sides. Then, using two forks, tear the batter into larger pieces in the pan. If this happens when you turn it over, it’s no big deal. Pile the finished portions onto a platter and keep warm in the oven. Sprinkle with sugar just before serving. Anything fruity goes best with this (fruit salad, apple compote, preserves, or canned fruit).
