Quark pancakes with spelt flour

Ingredients for 1 servings:

  • 3 eggs
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 250 ml milk, 1.5% fat
  • 250 g low-fat curd cheese, 10% fat
  • 1 packet of baking powder
  • 1 tsp baking soda
  • 200 g spelt flour
  • 50 g cornstarch
  • Fat for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Combine the spelt flour, cornstarch, baking soda, and baking powder and set aside. Beat the eggs with the sugar and vanilla sugar until frothy (about 5 minutes), then add the quark and gradually the milk. Once everything is smooth, gradually stir in the flour mixture. Let the finished batter rest for about 30 minutes. I bake the pancakes in a little melted butter in a medium pan. This batch makes about 10 pancakes. One pancake has about 200 calories. These pancakes are very filling.
