Ingredients for 1 servings:
- 5 eggs
- 200 g sugar (carb sugar 100%, erythritol + stevia)
- 750 g quark 40%
- 250 g mascarpone
- 2 bottles of vanilla flavor
- 1 lemon(s) or lime, untreated
- 5 tbsp coconut flour
- 5 peach(s), firm, not yet fully ripe
Instructions

Beat the eggs with the caster sugar until frothy. Stir in the quark, mascarpone, vanilla extract, lemon juice, coconut flour, and the finely chopped peaches. Pour into a round, greased springform pan and bake in a preheated oven at 150°C (convection oven) for 1 hour. Grate the lemon zest and add it if desired. Makes 12 cakes, approximately 180g each. Nutritional values approx.: 11g protein, 19g fat, 7.6g carbohydrates, of which 6.5g sugars, 2.4g fiber, 252 kcal per serving.
