Quark semolina apple tartlets

Ingredients for 4 servings:

  • 3 small apples
  • 2 tbsp water
  • 1 tbsp raisins
  • some sugar
  • 1 pinch of cinnamon
  • 60 g butter
  • 60 g granulated sugar
  • some lemon zest
  • 2 pinches of cinnamon
  • 3 small eggs
  • 250 g quark (cottage cheese)
  • 60 g semolina
  • 25 g almonds, ground
  • ½ pack of baking powder
  • 1 pinch of salt
  • Butter for the molds
  • Granulated sugar for the molds
  • some cinnamon sugar for sprinkling
  • some powdered sugar for dusting

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Peel and halve the apples and slice them into thin slices. Briefly sauté them in a little water with the sugar, cinnamon and raisins. Beat the butter, sugar, lemon zest and cinnamon in a mixer until creamy. Separate the eggs and gradually stir the yolks into the butter mixture. Stir in the curd cheese. Mix the semolina, almonds and baking powder and stir into the curd cheese mixture. Beat the egg whites with a pinch of salt until stiff peaks and stir into the curd cheese mixture. Grease small ovenproof dishes with butter and sprinkle with granulated sugar. Spoon some of the curd cheese mixture into the dishes, then some of the apples, more curd cheese mixture and then some more apples on top. Sprinkle with cinnamon sugar and bake in a preheated oven at 180°C (top/bottom heat) for approx. 40 minutes. Allow to cool briefly, then turn out and sprinkle with icing sugar.
