Ingredients for 6 servings:

  • 350 g quark
  • 90 g sugar
  • 30 g cream powder (e.g. vanilla pudding powder)
  • 1 lemon(s), zest
  • 1 orange(s), zest
  • 5 egg yolks
  • Protein, approx. 4 – 5
  • 1 tbsp powdered sugar
  • Butter and sugar for the molds

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

For the quark mixture, first combine the quark, sugar, cream powder, half of the lemon and orange zest, and the egg yolks in a bowl. Stir everything together and mix well. Butter the soufflé dishes and toss with sugar. Beat the egg whites with a little powdered sugar until stiff peaks form and carefully fold into the quark mixture. Pour the mixture into the prepared soufflé dishes. Bake in a preheated oven at 190°C (top/bottom heat) for approximately 15-20 minutes.
