Ingredients for 6 servings:

  • 175 g flour
  • 1 tsp baking powder
  • 100 g butter
  • 125 g quark, low-fat
  • ½ tsp salt
  • 375 g sour cream
  • 4 eggs
  • 200 g bacon, streaky
  • 300 g cheese, grated (Emmental)
  • 1 tbsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare a shortcrust pastry from the first five ingredients and chill. Grease a 26 cm springform pan or a 28 cm quiche pan. Line the base and sides with pastry, prick the pastry base several times with a fork, and chill again. For the topping, whisk the cream with eggs, salt, and pepper. Dice the bacon and add it. Fold in the Emmental cheese and parsley. Spread the topping over the pastry base and bake the quiche at 200°C on the bottom rack for 40-50 minutes. Turn off the oven and leave the quiche in the oven for another 10-15 minutes.
