Quick and easy tofu salad

Ingredients for 1 servings:

  • 300g tofu
  • 4 small gherkins
  • 1 medium-sized egg(s), hard-boiled
  • ½ onion(s)
  • lots of pepper
  • 1 pinch of salt
  • 1 tbsp salad cream, reduced fat
  • 1 tsp mustard
  • possibly cucumber juice

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

as an alternative to potato salad, suitable for low carb

Cut the tofu into approximately 2 x 2 cm strips and fry them in a pan with a little oil. Then dice the cucumber, onion, and egg. Now mix the tofu, cucumber, egg, onion, mustard, and salad dressing. If you like, you can add a tablespoon of cucumber juice. Season with salt and pepper. Let the salad marinate in the refrigerator for 2 hours.
