Cook the tagliatelle noodles in salted water for 6 minutes, then drain. Add the Asian all-round seasoning to a pan. Remove the stalks from the chicory. Cut the chicory into strips. If chicory is too bitter for you, you can also use finely chopped pointed cabbage. Chop the parsley. When the noodles are ready, add the chicory to the Asian seasoning in the pan and sauté briefly. Add the noodles, season with salt and a little fish sauce, if desired. Add the parsley and stir everything together. This is a very quick and easy pasta dish that’s also a great way to use up leftovers. You can find the recipe for Klaumix’s all-round seasoning here: https://www.chefkoch.de/rezepte/3829151582981207/Allround-Wuerze-Asia.html. However, I make the seasoning with much more oil and store it in the refrigerator for several months. Alternatively, these ingredients (chili, ginger, garlic, olive oil, salt, possibly fish sauce) can also be added fresh to the pan.
