Quick cold cucumber soup

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 cup sour cream or crème fraîche
  • 50 ml mineral water
  • salt and pepper
  • e.g. lemon juice
  • e.g. herbs (parsley, dill, chives, coriander, mint)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Roughly chop the cucumber and season with salt. Let it stand for a moment, while you prepare the remaining ingredients. Mix the cucumber pieces with dill, pepper, a few mint leaves, and a few squeezes of lemon juice. Add mineral water to taste (depending on the consistency of the sour cream). Purée everything, then add the sour cream and the remaining herbs, except the chives, and continue to purée everything very finely. This creates a nice foam. Tip: Use cilantro sparingly. If you don’t like cilantro, you can leave it out; it just changes the flavor. You can now pour the soup into bowls, cups, etc. Sprinkle chives, cut into rings, on top as a garnish.
